Currently chilling in 45-degree water in the belly of the Fontainebleau in Miami Beach: 880 pounds of live red king crabs plucked off the coast of Norway.
The big guys weigh up to 8 pounds each and cost about $600 in the dining rooms of Scarpetta, Hakkasan, Michael Mina 74 and other Fontainebleau restaurants. That's enough for a four-top to share as an appetizer or for two people to take down as dinner.
The resort's executive chef, Thomas Connell, says he likes to simply steam then chill the king crab, to "enjoy true seafood flavor."
