The Who: Lima-born Chef and owner Rafael Perez (Little Palm Island Resort & Spa) recently opened GK Bistronomie, a globally influenced Peruvian spot in Wynwood.
The Space: A loft-like dining room done up with white pine tables, an open kitchen and an indoor-outdoor bar made of black granite and iron.
The Dishes: Seafood-focused and Peruvian-inspired. The menu has ceviches, tiraditos, appetizers and main courses, with smaller plates $12-$18 and mains in the mid-$20s.
Herbed teas are offered in carafes, a nice touch. Cherrywood-smoked shrimp ceviche is served with heirloom tomatoes, lime, cilantro and green plantains, while a mushroom version is dressed with yuzu. Colorful tiraditos include a grouper served with a Parmigiano-Reggiano cream instead of the usual aji amarillo, plus lime, rocoto and chives, and a pisco-cured salmon with creme fraiche and caviar. Empanadas filled with foie gras and caramelized onions elevate a street food staple, while skirt steak anticuchos is presented sliced over a huancaina sauce.
Mains include a massive lamb shank slow-cooked in Peruvian “moonshine” sauce, a green-plantain-crusted salmon with a pineapple vinaigrette and two kinds of steak, including a 16-ounce rib-eye. Not-to-be-missed desserts: Nutella mousse and creme brulee.
The Bottom Line: Wynwood’s dining scene gains a sophisticated newcomer with this sleek Peruvian spot.
