Former Top Chef contestant (and noted scallop detractor) Fabio Viviani has locked down a Nov. 7 grand-opening date for his Siena Tavern at 404 Washington Ave. in Miami Beach.
Too long to wait? Fabio fans can pick up a copy of his new “Fabio’s American Home Kitchen,” featuring more than 125 of his recipes, out today ($30, Hachette Books).
The Chicago-based chef will return to Miami Nov. 22-23 to promote his new cookbook at the Miami Book Fair International.
Meanwhile, the Miami Beach outpost of Viviani’s Siena Tavern is set to open in the 10,000-square-foot space that used to house China Grill. Expect to see dishes from the original Siena Tavern in Chicago, including wagyu beef meatballs with ricotta and roasted tomato sauce, and housemade gnocchi with truffle cream, fried sage and pancetta.
Helming Florence-born Viviani’s kitchen in South Beach is Rome-born executive chef Paolo Del Papa (pictured, right), the former top chef at Casa Tua. Bar Lab partners Elad Zvi and Gabriel Orta created the restaurant’s cocktail program.
