The Who: F.A.B., for Fresh American Bistro, is the latest from executive chef Philippe Ruiz, whose notable résumé includes 12 years at the Biltmore’s Palme d’Or.
The Space: The former Alba at Sole on the Ocean in Sunny Isles Beach still sports floor-to-ceiling windows, framing ocean views. The interior has been “Americanized” with repurposed wood treatments, tufted leather couches, surfboards and a massive restored American flag over the bar ceiling. There’s a wrap-around patio outside offering al fresco options.
The Dishes: Modern American with global influences. Prices are reasonable, with small plates averaging $12 and larger mains in the $20 range. Ingredients are sourced from local purveyors like Jackman Ranch, Rock Garden and Farmer Bob farms.
Housemade bread with olive tapenade hits the table first. From there choose from raw and cured fish like the tuna cannelloni or hogfish crudo with spiced whiskey. Flatbread pizzas include a short rib and mozzarella and a rich truffle and fontina cheese. Mains include a lamb chop over Israeli couscous “risotto,” local grouper with citrus sauce and seared duck breast with brussels sprouts.
