The location? 1514 S. Dixie Hwy. Longtime Miamians, University of Miami alums and pizza enthusiasts may recognize the address as the former Miami’s Best Pizza, which closed last year after more than four decades in that home.
Spring Chicken will serve chicken, biscuits and sides inspired by Kunkel’s grandmother’s original recipes: “a modern take on Southern favorites, served in the convenient, quick format of fast-casual,” according to a news release.
Kunkel announced the idea in a Wall Street Journal article in February, highlighting various restaurateurs across the country who are making entries into fast-casual dining. At the time, Kunkel said he planned to call his chicken concept Lewellyn’s Chicken & Biscuits, named in honor of his grandmother and as a nod to the fried chicken dish served at his Yardbird restaurants in Miami Beach (1600 Lenox Ave.) and Las Vegas.
The name has shifted to Spring Chicken, but plans haven’t changed: After the Coral Gables restaurant is open, Kunkel says he’ll open a second Spring Chicken at Miami International Airport late this year or early next.
