The who: Diplomat Prime, the beloved steakhouse known to the Hollywood community, has reopened as a luxury boutique steakhouse inside the Diplomat Resort & Spa. Nicolay Adinaguev (Steak 954) leads the kitchen as Executive Chef.
The space: A plush 68-seat dining room with white leather armchairs, dark wood and vintage black-and-white photos. The close-set tables and large scale of the room set the right tone for a cozy-yet-opulent atmosphere.
The dishes: Modern steakhouse classics. The kitchen tweaks familiar dishes like Caesar salad and crab cakes while also remaining true to hearty cuts of pricey beef. Prices are as indulgent as the setting with starters $15-$22 and mains $32-$95.
Dinner starts with mini-loaves of warm sourdough bread and whipped butter flecked with Hawaiian salt. Then it’s on to dishes of roasted beets with creme fraiche and arugula, a watercress salad tossed with manchego cheese and preserved mang, and raw-bar dishes such as hamachi crudo with avocado mousse. Steak runs the gamut from an 8-ounce wagyu strip to a 28-ounce, dry-aged porterhouse for two. The “Not Steak” section of the menu includes local red snapper in a sweet potato curry and Skuna Bay salmon with braised cabbage and sage oil.
Decadent sides include a mushroom medley, roasted cauliflower tossed with bacon and house tater tots.
Desserts practice the same comfort-food-meets-gourmet execution with warm banana bread and yogurt gelato, and a peanut butter-filled fudge cake.
Bottom line: An urbanely elegant ode to slabs of pricey in Broward.
