Pisco y Nazca brings Peruvian to the 'burbs

The Who: The owners of Bulla Gastrobar tapped Peruvian chef Miguel Antonio Gomez Fernández, who most recently served as chef de cuisine of La Mar in San Francisco.

The Space: Located at The Palms at Town & Country in Kendall, the sprawling space is designed by the same firm that handled STK and Bagatelle. Earthy copper tones, teal and orange accents, walnut flooring, and handmade concrete tiles give the space the proper South American boho atmosphere.

The Dishes: Modern Peruvian. Prices are reasonable given the stylish trappings, with most starters $9-$13 and mains $14-$33.

Ceviche comes seven ways, including traditional with flounder, choclo and sweet potato, and with salmon and creamy jalapeño leche le tigre. Small plates like “butichino” bring fried pork buns stuffed with pork nikkei, hoisin mayo, pickled salsa criolla and lotus-root chips, while empanadas come with mushrooms or chicken and a rocoto pepper aioli.

Peruvian-Chinese specialties like lomo saltado, a straight-up version of the beef stir-fry, and corvina with pickled daikons and fried wontons show up on Pisco y Nazca’s menu. Jugosito is a seafood stew that brims with corvina, calamari, shrimp and mussels, and barlotto is a vegetarian barley risotto in a soy and vinegar broth.

The chocolate dome is a fun-to-watch dessert composed of sweet potato custard and a warm ganache topped with liquid white chocolate, which then melts the dome to reveal it all.

The Bottom Line: Kendall get a dose of Miami chic with this trendy Peruvian newcomer.
