Lindsay Autry, Xavier Torres, Todd Erickson, Jason Pringle, & Richard Hales to compete in Cochon 555

Pork lovers will squeal with delight over Cochon 555, taking place at 4 p.m. Sunday, April 19 at the Loews Miami Beach Hotel. There, Lindsay Autry of Fin & Feather, Xavier Torres of Drunken Dragon, Todd Erickson of Haven South Beach, Jason Pringle of db Bistro Moderne and Richard Hales of Blackbrick, all champions of whole hog utilization, will prepare a maximum of six dishes with hopes to win votes from crowd and judges. Those judges include last year’s anointed Prince of Porc, Jose Mendin, as well as Aaron Brooks of Edge Steakhouse, Daniel Serfer of Mignonette, Bradley Herron of Michael’s Genuine and Norman Van Aken of Norman’s.

 

The winner goes on to compete for the title of “King or Queen of Porc” at the tour finale, Grand Cochon at Snowmass/Aspen in June. The grand champion will be rewarded with a 4-day wine experience in Rioja. And, new in 2015, the winner’s kitchen countertops will be resurfaced with–sponsor alert!– Wilsonart Quartz.

 

The  $125 general admission ticket includes the chef-prepared dishes in an all-inclusive stand up reception with  tastings from Wines of Germany and St. Francis Winery. There’s more booze, too–lots of it-and food besides the pig, including that found at–sponsor alerts!–The Cheese Course’s Monger Cheese Bar, Rappahannock Oyster Shelf, Prosciutto di Parma, Black River Caviar, Hudson Valley Foie Gras and a TarTare Bar featuring Creekstone Farms prepared by Pubbelly’s Mendin. There will also be a Pop-Up Butcher Shop with demos by Andres Barriento of Miami Smokers, raising money for the supporting culinary students from Johnson & Wales. If you haven’t burst out of the pen at this point, a Swine & Sweets course will be served. But it’s not over until the pig squeals. 

 

On Friday, there’s a  Chef’s Course dinner featuring five guest chefs including Brooks, Cesar Zapata, Danny Smiles and Timon Balloo followed by five courses paired with the Wines of Germany at Pubbelly. On Saturday, the festivities continue with Mendin and Big Beef versus Heritage Pork in a “Large Format Feast” Dinner at Pubbelly paired with St. Francis Winery, Hirsch, Reserve, Old Potrero 18th Century and Creekstone Farms.
