James Beard'ed Philly-based chef Jose Garces just debuted his first restaurant at sea, Bayamo on the brand new Norwegian Escape, with hopes of eventually opening his first land-based restaurant in Miami. "How can he not be in Miami," mused one of his staffers to us on the ship's inaugural sailing. We asked the chef himself, and he told us the idea behind opening Bayamo on the ship is to eventually parlay that into a land-based restaurant in Miami. "That's the plan," he said. Until then, you can also check out his goods at one of seven restaurants in Philly: Amada, Tinto, Distrito, Rosa Blanca, Village Whiskey, Carces Trading Company, and Volver. He also has some restaurants in Atlantic City, DC, and Scottsdale, Arizona and Palm Springs and, in his spare time, heh, serves as Executive Chef for Mercat a la Planxa in his native Chicago.
