Michelin-starred chef Philippe Ruiz is back in the kitchen. After leaving upscale Brickell spot Lippi (which has since morphed into Tamarina), the lauded chef is helming a farm-influenced eatery at Sunny Isles Beach hotel Sole on the Ocean.
Fresh American Bistro, also known as F.A.B., a seasonally charged, casually refined American bistro, will debut on Jan. 22. Overseen by chef Ruiz, F.A.B.’s culinary team will create a blend of classic American favorites executed with French techniques.
Serving breakfast, lunch and dinner, the restaurant (which replaces Ralph Pagano’s Alba)will source ingredients from Jackman Ranch, Rock Garden and Farmer Bob farms. The 90+ seat bistro overlooks the Atlantic Ocean.
