Chef Marcus Samuelsson was already seen at the grand opening party of OLLA, the New Mexican inspired concept by his good pal, COYO Taco Chef Scott Linquist on Lincoln Road, but starting on November 28, you, too can check the place out as long as you can pronounce it—oi-ya, ok?
Linquist, also known for developing NYC’s Mexican hot spot mini-chain Dos Caminos, is all about authentic Mexican from various regions including Oaxaca, Puebla, Yucatan and Veracruz. Specialties include everything from guac prepared tabelside and Chapulines–marcona almonds, chile morita, and Mexican chocolate powder–to erizo-sea urchin, tostadita, asiento, avocado, chile de arbol, red onion, and papalo. Oysters will be made with sangrita verde, tomatillo-cucucmber mignonette, and lime cured habaneros.
Large plates include Amarillo–diver scallops, cauliflower, red yam, chochoyotes (corn masa dumplings), oaxacan yellow mole, Sepia– cuttlefish, cebollitas asadas, charred serrano, herb salad, epazote chimichurri, Mixiote– lamb shoulder, barbacoa, pasilla recado, salsa borracha and Cochinita Pibil-pig, roasted yucatan style, achiote, and traditional garnishes.
The restaurant will be open for dinner daily seven days a week with lunch and brunch to be announced. A late night bar scene with drink specials and DJs will keep the place hopping through the wee hours.
