Opening soonish in Wynwood is Coyo Taco, whose co-owner Anna Robbins says “My dream of opening a taqueria in Miami was born in 2003 when I moved to the Design District from California and couldn’t find an authentic taco,” says Anna Robbins. “Wynwood is the perfect home for this concept.” Executive chef Scott Linquist was the former National Executive Chef of Dos Caminos Mexican Kitchen and the author of Mod Mex: Cooking Vibrant Fiesta Flavors at Home.
Coyo will offer “smashed to order” guacamole and tortillas “handcrafted on-site in an authentic Mexican tradition.” Veggies will be locally sourced, meat and seafood naturally raised and humanely treated, they say. Aguas Frescas and Margaritas will also be made from scratch. “Staying true to our Todo Es Fresco or ‘Everything is Fresh’ philosophy, our ingredients are 100% natural,” they emphasize. The place is shooting for a mid-November opening.
