1. Crab Cake Benedict

The Bene: Chef Gabriel Fenton ditches bread for golden, brown and delicious crab cakes, atop which he layers poached eggs, crispy pancetta and Old Bay hollandaise.
2. Eggs Benedict Casserole
$49.95 as part of all-you-can-eat brunch at Nikki Beach, 1 Ocean Dr., Miami Beach, 305-538-1111; available 11 a.m.-4 p.m. Sunday
The Bene: De-con-struc-ted. The egg is cooked sous vide. The biscuit is broken and distributed throughout, and there’s hollandaise everywhere. Choose your add-ins: Serrano ham, spinach, smoked salmon or nada. It’s all in a terra cotta cazuela and baked so it’s super hot.
3. Lobster Benedict

The Bene: Lobster in the house! As if poached eggs weren’t rich enough, add Maine lobster poached in straight-up butter. A dose of lime-spiked hollandaise is so Miami.

4. Carbonara Eggs Benedict

The Bene: Chef Giorgio Rapicavoli’s Italian twist on the poached-egg classic is to make it carbonara-style with bacon, black truffle, Grana Padano cheese, all over ciabatta toast.
5. Benedict Azteca

The Bene: A mountain of Mexican deliciousness — poached eggs in masa sopes, pork cochinitas, salsa roja, spinach, chipotle crema and potatoes.
6. Pulled Pork Benedict

The Bene: Pulled pork and poached eggs over jalapeño cornbread and golden, mustardy barbeque mayonnaise. It’s like Miami’s caja china culture meets Americana comfort food.
7. Short Rib Benedict

The Bene: Braised short ribs atop potato pancakes with poached eggs, all generously smothered in hollandaise. Because you can’t leave hungry, it’s served with breakfast potatoes and mixed greens.
8. Corned Beef Benediction

The Bene: Corned beef and eggs Benedict had a baby. Housemade corned beef is sautéed with potatoes, onions and peppers, served on a bagel with soft poached eggs and hollandaise.
9. Smoked Salmon Benedict

The Bene: What’s brunch without smoked salmon? The trusty Rusty Pelican puts it over poached eggs on buttered brioche with bearnaise sauce and a side of potato hash.
