Whereas Market focuses on classics and light, original refreshers, Matador Bar tends to get way inventive when it comes to their menu. If you’re looking for something light and frothy, opt for Jean Georges’s signature Amalfi Sunset, made with Bombay Sapphire, Grand Marnier, Cocchi Americano, and Luxardo Maraschino Liqueur ($16). For a taste of summer and spice, try Market at EDITION’s Bel Cacio, made with Chivas Extra, Jameson, lemon and orgeat ($16). At Matador Bar, you can’t go wrong with the classic Vesper, made with Plymouth Gin, Grey Goose, Lillet Blank and a lemon twist ($18), while the Game Of Thrones inspired Melisandre blends Belvedere, blackberry shrub, grapefruit, lemon and sage for an earthy and refreshing concoction ($18).

The Dread Pirate Roberts

2 ounces of Plantation Pineapple Rum

3/4 ounce of lemon juice

3/4 ounce of coriander peppercorn syrup

Shake and strain into a large coup and top with 1 1/2 ounces of India Pale Ale
