The drink: “The Pineapple” by Jack Hubbard

The story: Fierce on the outside, fabulously sweet and tangy on the inside, the pineapple is the universal symbol of extravagant hospitality. At Matador Bar at The Miami Beach Edition, in collaboration with Jean-Georges Vongerichten, London bartender Jack Hubbard of Absolut Elyx channels his tropical side for “The Pineapple,” which is served in a stunning and quite massive copper pineapple. The vessel, custom-made for the Edition by Absolut Elyx, symbolizes the 1921 copper pot still used to manually distill the vodka in Sweden. Inside, Hubbard’s elegant combination of Elyx, Palo Cortado Sherry (an intermediate sherry that’s full and deep yet still floral), salted caramel bitters, Bittermens Elemakule tiki bitters (blend of cinnamon, allspice and island spices), and house-made pineapple and rosemary syrup, is poured over crushed ice. A torched sprig of rosemary is paired with a slice of dehydrated pineapple and the cocktail is then covered until it reaches the guest. When the lid is removed, the distinct aromas fill the dining room.
