The drink: Spanish-American War

The story: Bartender Jason Hodges had the “opposites attract” theory in mind when he created the Spanish-American War cocktail at Batch Gastropub in Brickell. For the base, he combines seemingly conflicting spirits— Patron tequila and George Dickel rye— and then pairs the two with fresh papaya, mango, and citrus. The result is topped with a forthy strawberry-ginger foam. Instead of being at war with one another, he says the Latin (tequila, papaya, mango) and American (rye and strawberry) ingredients blend wonderfully. For garnish, he adds a light dusting of cracked papaya seeds.
