The story: Bartender Joel Mesa wants to cool you down with his spin on the classic Collins cocktail. At Bulla Gastrobar, where sociable tapas run the show, the traditional gin-based drink gets an upgrade with a delicate lemongrass syrup, St. Germain elderflower liqueur, three cucumber slices and the drink’s typical accompaniment, fresh lemon juice. The ingredients are stirred in a tumbler with extra ice and the garnish comes in the form of an aromatic rosemary sprig. Pair it with the Spanish omelet with roasted garlic aioli or the codfish fritters with tartar sauce. The lemongrass definitely has the ability to stand up to spice without overpowering the flavors of Spain.
