The story: Discover a world-class twist on the classic Pisco Sour inside the Thompson’s historic poolside bungalow. The sexy speakeasy is an unrivaled setting for Julio Cabrera and Danny Valdez’s artisanal cocktails alongside chef Michelle Bernstein’s tasting menu and small plates from the crudo bar. The Ceviche Sour puts Peru front and center with Campo De Encanto Pisco, Peruvian aji amarillo chili pepper syrup, fresh lemon and grapefruit juice, and emulsified egg whites. A crisp cilantro leaf is placed atop the foam in a striking cocktail glass. What’s more, valet parking is $5 for locals when validated.
