Dessert Funnel Cakes

You will need enough oil to fill a skillet 2 inches and a funnel to drip the batter into the hot
oil. Serve hot as a snack or dessert dusted with powdered sugar. * Vegetable or canola oil for
deep-frying * 1 egg * -2/3 cup milk * 1-1/3 cups all-purpose flour * 2 tablespoons sugar * ¼
teaspoon salt * ¾ teaspoon baking powder

Fill a large skillet with enough oil to come up 2 inches in the pan. Heat to 375 degrees using a
candy or deep-fry thermometer. Whisk egg into milk and sift flour, sugar, salt and baking powder
into another bowl. Blend egg and milk mixture into the flour and beat until smooth. Lace about 1 cup
of the batter at a time into a funnel, holding the hole closed with a fingertip. Allow the batter to
flow from the funnel into the hot oil and swirl batter several times in coiled, snake-like pattern.
Deep-fry 1 to 2 minutes on each side, or until golden brown. Drain on paper towels and sprinkle with
powdered sugar, if you wish. Repeat with remaining batter. Makes about a dozen large coils or 2
dozen small coils.
