Pineapple Coconut Martini
- Combine 1½ ounces coconut rum (Captain Morgan's Parrot Bay preferred), 1 ounce pineapple juice and a splash of grenadine in an ice-filled shaker.
- Shake well and strain into a chilled martini glass.
- Garnish with rum-infused fresh pineapple.
