“It’s time to move on,” says Philippe Ruiz, Miami’s most acclaimed French chef. Saturday is his last official day after 13 years at the Biltmore Hotel’s Palme d’Or, where he garnered a rare four-star rating from The Miami Herald and the top food ranking in the South Florida Zagat guide. Ruiz’s next project: An as-yet unnamed Brickell restaurant backed by investors in downtown hot spot Zuma. He will also continue as a consultant for the Biltmore, and two au revoir events give fans more chances to taste his cooking at the historic Coral Gables hotel: a Charles Krug wine dinner with winemaker Peter Mondavi at 7 p.m. Tuesday, and a white truffle dinner at 7 p.m. Jan. 26.
