Since part of the corporate solution involves education — personable servers eager to share taste tips about the menu’s various species— it works even for fish-loving foodies, as does the chain’s dedication to freshness. What doesn’t work for sophisticated seafood fans is the way the chain’s way over-complicated sauces—like a lime/garlic/tomato/kalamata olive/feta concoction on wild Gulf shrimp-- cover up the natural fresh flavor. But no problem; order from the list of seafood simply grilled over a wood fire, and ask for your sauce on the side.
